Ingredients
1 baguette, sliced into rounds
2 ripe avocados
1 1/2 cups cherry tomatoes, quartered
3 cloves garlic, 2 minced and 1 whole for rubbing
2 tablespoons fresh basil, chopped
3 tablespoons extra virgin olive oil, plus more for brushing
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
Red pepper flakes optional
Balsamic reduction for drizzling
Instructions
1. Preheat the oven to 400°F.
2. Brush the baguette rounds with olive oil and bake for 6 to 8 minutes until golden and crispy.
3. Rub the warm toasted bread with the whole garlic clove.
4. In a bowl, mash the avocados with lemon juice, one clove of minced garlic, salt, and black pepper until creamy but slightly chunky.
5. In a separate bowl, combine cherry tomatoes, remaining minced garlic, basil, olive oil, balsamic vinegar, salt, and pepper.
6. Spread a layer of smashed avocado onto each toasted round.
7. Top with the cherry tomato mixture.
8. Drizzle with balsamic reduction and sprinkle with red pepper flakes if using.
9. Serve immediately.
Notes
Assemble just before serving so the bread stays crisp and the avocado stays vibrant.
