Ingredients
24 cherry tomatoes
4 ounces goat cheese, softened
2 tablespoons cream cheese, softened
1 tablespoon fresh chives, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon lemon zest
Salt, to taste
Black pepper, to taste
Instructions
1. Slice the tops off the cherry tomatoes and use a small spoon to scoop out the seeds and pulp.
2. Turn the tomatoes upside down on paper towels to drain for 10 minutes.
3. Mix the softened goat cheese, cream cheese, chives, parsley, lemon zest, salt, and black pepper until smooth.
4. Spoon or pipe the cheese mixture into each hollowed-out tomato.
5. Arrange the stuffed tomatoes on a serving platter and chill until ready to serve.
Notes
Drain the tomatoes well so the filling stays in place.
Use a piping bag or plastic bag with corner snipped for neat filling.
Chill the stuffed tomatoes for at least 30 minutes before serving for best flavor.
