Chicken Taco Bites pack bold taco flavor into a small party-friendly appetizer. Crispy tortilla cups hold seasoned chicken, melty cheese, and fresh toppings for an easy crowd-pleaser.
Ingredients
2 cups cooked shredded chicken
1 tablespoon olive oil
1 tablespoon taco seasoning
2 tablespoons salsa
12 wonton wrappers or small tortilla rounds
1 cup shredded cheddar cheese
1/2 cup pico de gallo
1/4 cup sour cream
2 tablespoons chopped cilantro
Nonstick spray
Instructions
1. Preheat the oven to 375°F.
2. Lightly spray a mini muffin pan with nonstick spray.
3. Press one wonton wrapper or tortilla round into each muffin cup.
4. Bake the shells for 5 to 7 minutes until lightly crisp.
5. Heat the olive oil in a skillet over medium heat.
6. Add the shredded chicken, taco seasoning, and salsa, then stir until the chicken is hot and evenly coated.
7. Fill each baked shell with the chicken mixture.
8. Top the chicken with shredded cheddar cheese.
9. Return the pan to the oven and bake for 3 to 5 minutes until the cheese melts.
10. Top each bite with pico de gallo, sour cream, and cilantro before serving.
Notes
Use rotisserie chicken to save time.
Add jalapeño slices for extra heat.
Serve the bites warm for the best texture.
