Description

Cucumber Avocado Bites offer a cool and creamy appetizer made with fresh cucumber rounds topped with mashed avocado, lime juice, cilantro, and a sprinkle of chili powder. They provide refreshing crunch and smooth texture perfect for summer gatherings.


Ingredients

2 large English cucumbers

2 ripe avocados

Juice of 1 lime

1 tablespoon fresh cilantro, chopped

Salt, to taste

Black pepper, to taste

1/4 teaspoon chili powder or smoked paprika

2 tablespoons red onion, finely diced (optional)


Instructions

1. Wash and dry the cucumbers, then slice them into 1/2-inch thick rounds.

2. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.

3. Mash the avocado with lime juice, cilantro, salt, and black pepper until smooth.

4. Spoon or pipe the avocado mixture onto each cucumber round.

5. Sprinkle each bite with chili powder or smoked paprika and red onion if using.

6. Arrange on a serving platter and serve immediately.
