Ingredients

2 large English cucumbers, sliced into rounds

8 ounces fresh mozzarella, sliced or torn

1 cup cherry tomatoes, halved

Fresh basil leaves

2 tablespoons olive oil

1 tablespoon balsamic glaze

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Slice the cucumbers into 1/4 inch thick rounds and pat dry.

2. Place a small piece of mozzarella on each cucumber round.

3. Top with a cherry tomato half.

4. Add a small fresh basil leaf on top.
