Description

Cucumber Cream Cheese Bites with Dill are cool, creamy, and refreshingly light. Crisp cucumber rounds topped with herbed cream cheese and fresh dill make the perfect no-cook appetizer for any gathering.

Ingredients

2 large English cucumbers, sliced into rounds

8 ounces cream cheese, softened

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

1 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon salt

Extra dill sprigs for garnish

Instructions

1. Slice the cucumbers into 1/4 inch thick rounds and pat dry with a paper towel.

2. Mix the cream cheese with dill, lemon juice, garlic powder, salt, and black pepper until smooth.

3. Spoon or pipe the cream cheese mixture onto each cucumber round.

4. Garnish with a small sprig of fresh dill and a pinch of black pepper.

5. Arrange on a platter and serve immediately or chill for up to 30 minutes before serving.

Notes

Pat the cucumber slices dry so the cream cheese topping stays in place.

Use a piping bag or zip-lock bag with the corner cut off for a cleaner presentation.

Add a thin slice of smoked salmon on top for an elevated version.
