Ingredients
2 large cucumbers, cut into thick chunks
1 cup cherry tomatoes
8 ounces feta cheese, cut into cubes
1/4 cup black olives
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
12 small skewers or toothpicks
Instructions
1. Thread the cucumber, cherry tomatoes, feta, and olives onto each skewer.
2. Arrange the skewers on a serving platter.
3. Whisk the olive oil, lemon juice, oregano, salt, and black pepper together.
4. Drizzle the dressing lightly over the skewers.
5. Serve chilled or at room temperature.
Notes
Pat the feta dry before assembling so the platter stays neat.
Use firm cucumbers so the skewers stay crisp.
Add fresh dill or mint if you want a brighter finish.
