Description

Cucumber Guacamole Bites are fresh, creamy, and packed with bold flavor. Crisp cucumber rounds topped with chunky guacamole make a light and healthy no-cook appetizer that is naturally vegan and gluten free.


Ingredients

2 large English cucumbers, sliced into rounds

2 ripe avocados

1 tablespoon lime juice

1/4 cup red onion, finely diced

1 small tomato, finely diced

2 tablespoons fresh cilantro, chopped

1/2 teaspoon garlic powder

1/4 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

Red pepper flakes or jalapeño slices for garnish


Instructions

1. Slice the cucumbers into 1/4 inch thick rounds and pat dry.

2. Mash the avocados in a bowl with lime juice, salt, black pepper, garlic powder, and cumin.

3. Fold in the red onion, tomato, and cilantro.

4. Spoon a generous amount of guacamole onto each cucumber round.

5. Garnish with red pepper flakes or a slice of jalapeño.

6. Serve immediately.


Notes

Make the guacamole just before serving to keep it green and fresh.

Add a squeeze of extra lime juice over the tops to prevent browning.

Top with a small tortilla chip for added crunch.
