Ingredients
2 large English cucumbers, sliced into rounds
1 cup hummus, store-bought or homemade
1/2 teaspoon smoked paprika
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
1/4 teaspoon black pepper
Red pepper flakes for garnish
Pine nuts optional
Instructions
1. Slice the cucumbers into 1/4 inch thick rounds and pat dry.
2. Spoon a generous dollop of hummus onto each cucumber round.
3. Drizzle lightly with olive oil.
4. Sprinkle with smoked paprika, black pepper, and red pepper flakes.
5. Garnish with fresh parsley and pine nuts if using.
6. Arrange on a platter and serve immediately.

Use thick hummus so it holds its shape on the cucumber rounds.
