Description

Cucumber Rolls with Cream Cheese and Veggies are fresh, colorful, and fun to eat. Thinly sliced cucumber wraps filled with creamy herbed cheese and crisp vegetables make a beautiful low-carb appetizer that is as impressive as it is easy to make.


Ingredients

2 large English cucumbers

6 ounces cream cheese, softened

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

1/2 red bell pepper, cut into thin strips

1/2 yellow bell pepper, cut into thin strips

1 small carrot, julienned

1/4 cup baby spinach leaves

1 tablespoon lemon juice

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Use a vegetable peeler or mandoline to slice the cucumbers into long, thin, flat strips.

2. Pat the cucumber strips dry with a paper towel.

3. Mix cream cheese with dill, chives, lemon juice, salt, and black pepper until smooth.

4. Spread a thin layer of herbed cream cheese onto each cucumber strip.

5. Place a few strips of bell pepper, a few carrot sticks, and a small spinach leaf at one end.

6. Roll the cucumber strip tightly around the filling and secure with a toothpick.

7. Arrange on a platter and serve chilled.


Notes

Dry the cucumber strips well so they grip the filling without slipping.

Use a mandoline for even, thin strips that are easier to roll.

Fill up to one hour ahead and refrigerate until ready to serve.
