Ingredients

2 large English cucumbers, sliced into rounds

4 ounces feta cheese, crumbled

1/2 cup kalamata olives, sliced

1/2 cup cherry tomatoes, quartered

2 tablespoons red onion, finely diced

2 tablespoons fresh parsley, chopped

2 tablespoons olive oil

1 teaspoon dried oregano

1/4 teaspoon black pepper


Instructions

1. Slice the cucumbers into 1/4 inch thick rounds and pat dry.

2. In a small bowl combine feta, olives, tomatoes, red onion, parsley, olive oil, oregano, and black pepper.

3. Spoon the Greek topping onto each cucumber round.

4. Drizzle lightly with extra olive oil.

5. Garnish with a pinch of dried oregano and fresh parsley.

6. Serve immediately or chill briefly before serving.


Notes

Use full-fat block feta and crumble it yourself for the creamiest texture.
