Greek Salad Skewers are fresh, crisp, and full of bright Mediterranean flavor. Cherry tomatoes, cucumber, olives, feta, and herbs come together in an easy appetizer that feels light and colorful.
Ingredients
24 cherry tomatoes
1 large cucumber, cut into thick chunks
24 kalamata olives
8 ounces feta cheese, cut into cubes
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
12 small skewers or toothpicks
Instructions
1. Thread one cherry tomato, one cucumber chunk, one olive, and one cube of feta onto each skewer.
2. Arrange the skewers on a serving platter.
3. Whisk the olive oil, lemon juice, oregano, salt, and black pepper together.
4. Drizzle the dressing lightly over the skewers.
5. Serve chilled or at room temperature.
Notes
Use firm cucumber so the skewers hold well.
Pat the feta dry before assembling to keep the platter neat.
Add fresh mint or parsley if you want a brighter finish.
