Description

Greek Yogurt Parfait Cups with Granola are creamy, crunchy, and naturally sweet in every layer. Individual cups layered with thick Greek yogurt, fresh berries, and crunchy granola make a healthy and beautiful brunch appetizer ready in minutes.


Ingredients

2 cups plain or vanilla Greek yogurt

1 cup granola

1 cup fresh strawberries, sliced

1/2 cup fresh blueberries

1/2 cup fresh raspberries

3 tablespoons honey

1 teaspoon vanilla extract

Fresh mint for garnish


Instructions

1. Stir vanilla extract and one tablespoon of honey into the Greek yogurt until combined.

2. Spoon a layer of Greek yogurt into the bottom of each small cup or glass.

3. Add a layer of granola on top of the yogurt.

4. Add a layer of mixed fresh berries.

5. Repeat the layers finishing with berries on top.

6. Drizzle each cup with honey.

7. Garnish with a small mint leaf.

8. Serve immediately or refrigerate for up to one hour before serving.


Notes

Add the granola just before serving so it stays crunchy.

Use flavored Greek yogurt like honey or strawberry for an extra flavor boost.

Layer in small clear cups or glasses for an elegant presentation at parties.
