Ingredients
2 red bell peppers
2 yellow bell peppers
1 large red onion
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
Salt, to taste
Black pepper, to taste
8 metal skewers
Instructions
1. Cut bell peppers into 1.5-inch squares and onion into 1.5-inch chunks.
2. Toss vegetables with olive oil, garlic, balsamic vinegar, oregano, salt, and pepper.
3. Thread peppers and onions alternately onto metal skewers.
4. Preheat grill to medium-high heat.
5. Grill skewers for 12 to 15 minutes, turning every 3 minutes, until tender and charred.
6. Serve warm with extra balsamic glaze if desired.
