Description
Grilled Corn on the Cob with Herb Butter features sweet summer corn brushed with a compound butter made from fresh herbs, garlic, and lime. It delivers smoky char and bright herbaceous flavor perfect for barbecues and cookouts.
Ingredients
6 ears fresh corn, husks removed
1/2 cup unsalted butter, softened
2 tablespoons fresh parsley, chopped
2 tablespoons fresh cilantro, chopped
1 tablespoon fresh chives, chopped
2 garlic cloves, minced
1 teaspoon lime zest
1 tablespoon lime juice
Salt, to taste
Black pepper, to taste
Instructions
1. Preheat grill to medium-high heat.
2. Mix softened butter with parsley, cilantro, chives, garlic, lime zest, lime juice, salt, and pepper until well combined.
3. Spread or brush a thin layer of herb butter over each ear of corn.
4. Wrap each ear loosely in foil.
5. Grill the corn for 15 to 20 minutes, turning every 5 minutes.
6. Remove from foil and grill directly for 2 to 3 minutes more for char marks.
7. Brush with additional herb butter and serve immediately.
Notes
Use room temperature butter for the easiest mixing.
Grill with foil first for even cooking, then unwrap for grill marks.
Prepare extra herb butter to serve alongside the grilled corn.
