Ingredients
4 medium zucchini
2 tablespoons olive oil
1/2 cup grated Parmesan cheese
2 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, chopped
1 teaspoon lemon zest
Salt, to taste
Black pepper, to taste
Instructions
1. Preheat grill to medium-high heat.
2. Slice zucchini into 1/2-inch thick rounds.
3. Brush both sides with olive oil and season with salt and pepper.
4. Grill zucchini rounds for 3 to 4 minutes per side until tender with grill marks.
5. Remove from grill and sprinkle immediately with Parmesan cheese.
6. Top with chopped basil, parsley, and lemon zest.
