Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
1 large egg
2 tablespoons melted butter
1 teaspoon vanilla extract
1 cup fresh strawberries, halved
1 cup fresh blueberries
1 cup fresh raspberries
Maple syrup for serving
Powdered sugar for dusting
Instructions
1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, whisk together buttermilk, egg, melted butter, and vanilla.
3. Pour the wet ingredients into the dry and stir until just combined.
4. Do not overmix.
5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
6. Drop tablespoon-sized amounts of batter to form mini silver dollar pancakes.
7. Cook for 1 to 2 minutes until bubbles form on the surface, then flip and cook for 1 more minute.
8. Allow the pancakes to cool slightly.
9. Thread the mini pancakes alternating with fresh berries onto small skewers.
10. Dust with powdered sugar and serve with warm maple syrup.
Notes
Do not overmix the batter to keep the pancakes light and fluffy.
Keep cooked pancakes warm in a 200°F oven while finishing the rest.
