Mini Quiche Cups deliver creamy egg custard with cheddar cheese, crispy bacon, and green onions baked in muffin tins. They offer perfect breakfast or brunch finger food with rich flavor and golden crust.
Ingredients
6 large eggs
1/2 cup heavy cream
1 cup shredded sharp cheddar cheese
6 slices bacon, cooked and crumbled
1/4 cup green onions, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
12 slices sandwich bread
2 tablespoons butter, melted
Instructions
1. Preheat oven to 375°F and grease a 12-cup muffin tin.
2. Cut bread slices into circles using a glass or cutter and press into muffin cups.
3. Brush bread cups lightly with melted butter.
4. Whisk eggs, heavy cream, salt, pepper, and garlic powder until smooth.
5. Divide cheese, bacon, and green onions evenly among bread cups.
6. Pour egg mixture over fillings, filling each cup 3/4 full.
7. Bake for 18 to 22 minutes until puffed and golden.
8. Cool for 5 minutes before removing from tin.
Notes
Press bread firmly into muffin cups to form crust.
Fill egg mixture to 3/4 full to prevent overflow.
Can be made ahead and reheated at 350°F for 10 minutes.
