Roasted Garlic and Tomato Bruschetta Crostini is deep, sweet, and packed with caramelized flavor. Slow-roasted garlic and tomatoes piled onto golden crostini with fresh basil and a balsamic drizzle make a rich and intensely flavored appetizer that tastes far more complex than it is to make.
Ingredients
1 baguette, sliced on a bias
1 pound cherry or Roma tomatoes, halved
1 whole head of garlic
4 tablespoons extra virgin olive oil, divided
2 tablespoons fresh basil, torn
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon dried thyme
Balsamic glaze for drizzling
Flaky sea salt for finishing
Instructions
1. Preheat the oven to 400°F.
2. Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35 to 40 minutes until soft and golden.
3. On a separate baking sheet, toss the tomatoes with 2 tablespoons olive oil, salt, pepper, and dried thyme.
4. Roast the tomatoes for 25 to 30 minutes until caramelized and burst.
5. Brush the baguette slices with remaining olive oil and bake for 6 to 8 minutes until golden and crispy.
6. Squeeze the roasted garlic cloves out of the peels and spread directly onto each crostini.
7. Top with roasted tomatoes and torn fresh basil.
8. Drizzle with balsamic glaze and finish with flaky sea salt.
9. Serve immediately.
Notes
Roast the garlic and tomatoes ahead of time and store separately in the refrigerator for up to 3 days.
