Description

These smoked salmon cucumber rounds are crisp, cool, and elegant. They come together quickly and work well for brunch boards, parties, or light appetizers.


Ingredients

1 large English cucumber

4 ounces cream cheese, softened

4 ounces smoked salmon

1 tablespoon chopped fresh dill

1 tablespoon chopped chives

1 teaspoon lemon juice

1/2 teaspoon lemon zest

1/4 teaspoon black pepper

Capers, optional for garnish


Instructions

1. Slice the cucumber into thick rounds and pat the slices dry with paper towels.

2. Stir the cream cheese, dill, chives, lemon juice, lemon zest, and black pepper together in a small bowl.

3. Spread or pipe a small amount of the cream cheese mixture onto each cucumber round.

4. Top each round with a piece of smoked salmon.

5. Garnish with extra dill or capers if desired.

6. Chill the rounds briefly or serve them right away.


Notes

Pat the cucumber dry so the topping stays in place.
