Description

Smoked Salmon Stuffed Cucumber Cups are a fresh, creamy, no-cook appetizer. Crisp cucumber cups hold a savory filling made with smoked salmon, cream cheese, capers, dill, lemon, and red onion for a light bite with classic bagel-style flavor.


Ingredients

2 English cucumbers

4 ounces smoked salmon, finely chopped

4 ounces cream cheese, softened

2 tablespoons capers, drained and chopped

2 tablespoons red onion, finely minced

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

1/4 teaspoon black pepper

Extra dill for garnish


Instructions

1. Slice the cucumbers into thick rounds, about 1 inch wide.

2. Use a small spoon or melon baller to scoop out the center of each round, leaving the bottom intact to form cups.

3. Add the cream cheese, smoked salmon, capers, red onion, dill, lemon juice, and black pepper to a bowl.

4. Mix until the filling looks smooth and evenly combined.

5. Spoon or pipe the filling into each cucumber cup.

6. Garnish each cup with extra dill and serve chilled.


Notes

Pat the cucumber cups dry before filling them so the filling stays firm.

Chill the filled cups for 10 to 15 minutes before serving for the best texture.

Use cold-smoked salmon for a softer bite or hot-smoked salmon for a flakier filling.
