Description

Spinach & Cheese Puff Pastry Bites feature flaky golden pastry filled with creamy spinach, ricotta, and melted mozzarella. They deliver savory rich flavor in a crispy bite-sized package perfect for brunch, appetizers, and party platters.


Ingredients

1 sheet puff pastry, thawed

2 cups fresh spinach, chopped

1/2 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 garlic clove, minced

1/4 teaspoon nutmeg

Salt, to taste

Black pepper, to taste

1 egg, beaten (for egg wash)


Instructions

1. Preheat oven to 400°F and line a baking sheet with parchment paper.

2. Sauté spinach and garlic in a pan over medium heat for 2 minutes until wilted, then let cool.

3. Squeeze excess moisture from cooked spinach.

4. Mix spinach with ricotta, mozzarella, Parmesan, nutmeg, salt, and pepper.

5. Roll out puff pastry on a lightly floured surface and cut into 12 squares.

6. Place a spoonful of spinach filling in the center of each square.

7. Fold corners up and pinch to seal or fold into triangles.

8. Brush tops with egg wash and bake for 18 to 22 minutes until puffed and golden.


Notes

Squeeze all moisture from spinach to prevent soggy pastry.

Keep puff pastry cold until ready to use for best rise.

Seal edges firmly so filling stays inside during baking.
