Description

Strawberry Basil Bruschetta with Cream Cheese is sweet, creamy, and refreshingly unexpected. Crispy toasted baguette rounds spread with whipped cream cheese and topped with a sweet strawberry basil mixture make a stunning appetizer or dessert bite that is perfect for spring and summer entertaining.

Ingredients

1 baguette, sliced into rounds

8 ounces cream cheese, softened

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1 1/2 cups fresh strawberries, finely diced

2 tablespoons fresh basil, chiffonade

1 tablespoon honey

1 teaspoon lemon juice

2 tablespoons extra virgin olive oil for brushing

Balsamic glaze for drizzling

Instructions

1. Preheat the oven to 400°F.

2. Brush the baguette rounds with olive oil and bake for 6 to 8 minutes until golden and crispy.

3. Beat the cream cheese with powdered sugar and vanilla until smooth and fluffy.

4. In a bowl, combine the diced strawberries, basil, honey, and lemon juice. Toss gently and let sit for 5 minutes.

5. Spread a generous layer of cream cheese onto each toasted round.

6. Spoon the strawberry basil mixture on top.

7. Drizzle with balsamic glaze.

8. Serve immediately.

Notes

Use ripe, sweet strawberries for the best flavor.

Do not let the strawberry mixture sit too long before using as it will release too much juice.

Swap cream cheese for mascarpone for a richer, more indulgent version.
