Ingredients
4 cups watermelon, cut into 1-inch cubes
8 ounces feta cheese, cut into 1-inch cubes
24 fresh mint leaves
1/2 cup balsamic vinegar
2 tablespoons sugar
24 small skewers or toothpicks
Instructions
1. Add the balsamic vinegar and sugar to a small saucepan.
2. Simmer the mixture over medium heat until it reduces and thickens slightly, then let it cool.
3. Cut the watermelon into even cubes and cut the feta into similar-sized cubes.
4. Thread one watermelon cube, one mint leaf, and one feta cube onto each skewer or toothpick.
5. Arrange the skewers on a serving platter.
6. Drizzle the cooled balsamic glaze lightly over the skewers just before serving.
