Description

Whipped Feta with Roasted Tomatoes is a creamy and savory appetizer that pairs tangy whipped feta with sweet blistered cherry tomatoes. It offers rich flavor, soft texture, and a bright finish that works well with crostini, crackers, or warm pita.


Ingredients

1 pound cherry tomatoes

2 tablespoons olive oil

2 teaspoons fresh thyme or oregano, chopped

Salt, to taste

Black pepper, to taste

8 ounces feta cheese

1/2 cup plain Greek yogurt

1 tablespoon lemon juice

1 tablespoon olive oil

1 small garlic clove

Fresh herbs, for garnish

Crackers, crostini, or pita, for serving


Instructions

1. Preheat the oven to 400°F.

2. Place the cherry tomatoes on a baking sheet and toss them with olive oil, thyme or oregano, salt, and black pepper.

3. Roast the tomatoes for 20 to 25 minutes until they soften and begin to burst.

4. Add the feta, Greek yogurt, lemon juice, olive oil, and garlic to a food processor.

5. Blend until the mixture turns smooth, creamy, and whipped.

6. Spread the whipped feta onto a serving plate or shallow bowl.

7. Spoon the roasted tomatoes over the whipped feta.

8. Garnish with fresh herbs and serve with crackers, crostini, or pita.


Notes

Use block feta for the best texture and strongest flavor.

Let the roasted tomatoes cool slightly before spooning them over the whipped feta.

You can prepare the whipped feta ahead and add the tomatoes just before serving.
