The Combo I Cannot Stop Making

Description

Smoked Salmon & Avocado Bites are fresh, creamy, and easy to assemble. Cucumber rounds, mashed avocado, and smoked salmon create a light appetizer that looks elegant on any platter.

Ingredients

1 large English cucumber

1 ripe avocado

4 ounces smoked salmon

1 teaspoon lime juice

1 tablespoon chopped chives

1/4 teaspoon salt

1/4 teaspoon black pepper

Instructions

1. Slice the cucumber into thick rounds and pat the slices dry.

2. Add the avocado, lime juice, salt, and black pepper to a small bowl.

3. Mash the avocado until mostly smooth.

4. Spread a small amount of avocado onto each cucumber round.

5. Top each round with a piece of smoked salmon.

6. Sprinkle chopped chives over the tops.

7. Serve immediately.

Notes

Use ripe avocado for the creamiest texture.

Pat the cucumber dry so the toppings stay in place.

Assemble the bites shortly before serving for the freshest look.

Here Is How You Make Them

  1. In a medium bowl, mash the avocados with lemon juice, garlic powder, red pepper flakes, salt, and pepper until smooth but slightly chunky.
  2. In a separate bowl, mix the softened cream cheese with lemon zest, half the dill, salt, and pepper until fully smooth.
  3. Arrange all the crackers or toasted baguette rounds in a single layer on a large serving board.
  4. Spread a thin layer of the cream cheese mixture onto each cracker.
  5. Spoon a generous layer of the mashed avocado on top of the cream cheese.
  6. Fold a thin slice of smoked salmon and drape it over the avocado layer.
  7. Add a thin slice of red onion on top of the salmon.
  8. Place one or two capers on each bite.
  9. Garnish with a pinch of fresh dill, a few chive pieces, and a small cluster of microgreens.
  10. Finish with a light sprinkle of red pepper flakes and a tiny squeeze of fresh lemon juice over the entire platter.
  11. Serve immediately for the best texture and freshness.

Playful Ways to Make It Your Own

  • Swap cream cheese for smoked salmon dip for a bolder, smokier base layer
  • Add a drizzle of sriracha honey on top for a irresistible sweet heat finish
  • Use cucumber rounds instead of crackers for a lighter, low-carb version
  • Sprinkle everything bagel seasoning over the avocado layer for extra crunch and flavor
  • Serve as the centerpiece of a full smoked salmon platter surrounded by blinis and crostini
  • Mix fresh cilantro into the avocado mash for a bright, herbaceous twist
  • Add thinly sliced radish on top for a peppery crunch and beautiful pop of color
  • Swap red pepper flakes for a tiny dollop of wasabi in the avocado for a bold kick
  • Top with a quail egg for an elegant, brunch-ready party version
  • Drizzle with good quality olive oil and flaky sea salt right before serving for a finishing touch
