Description

Burrata with Roasted Cherry Tomatoes & Crostini is a simple appetizer with creamy burrata, jammy roasted tomatoes, and crisp toasted bread. Roasting the tomatoes deepens their flavor and gives the dish a rich, fresh finish.


Ingredients

2 cups cherry tomatoes

2 tablespoons olive oil

2 garlic cloves, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

8 ounces burrata

1 baguette, sliced

Fresh basil leaves

1 teaspoon balsamic vinegar


Instructions

1. Preheat the oven to 400°F.

2. Add the cherry tomatoes, 1 tablespoon olive oil, garlic, salt, and black pepper to a baking dish.

3. Roast the tomatoes for 25 to 30 minutes until they burst and look jammy.

4. Brush the baguette slices with the remaining olive oil.

5. Toast the bread until golden and crisp.

6. Place the burrata on a serving plate and spoon the roasted tomatoes around and over it.

7. Drizzle with balsamic vinegar and scatter fresh basil on top.

8. Serve with the crostini on the side.


Notes

Let the burrata sit at room temperature for 15 minutes before serving.

Use sturdy baguette slices so they hold the creamy cheese well.

Serve right away while the crostini stays crisp.
