Description

Tomato Goat Cheese Bruschetta is tangy, creamy, and full of bold Mediterranean flavor. Golden toasted baguette rounds spread with creamy herbed goat cheese and topped with a garlicky tomato mixture make a sophisticated appetizer that is as easy to make as it is impressive to serve.


Ingredients

1 baguette, sliced into rounds

4 ounces goat cheese, softened

2 tablespoons cream cheese, softened

1 pound ripe tomatoes, diced

3 cloves garlic, 2 minced and 1 whole for rubbing

3 tablespoons extra virgin olive oil, plus more for brushing

2 tablespoons fresh basil, chopped

1 tablespoon balsamic vinegar

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon dried oregano

Honey for drizzling


Instructions

1. Preheat the oven to 400°F.

2. Brush the baguette rounds with olive oil and bake for 6 to 8 minutes until golden and crispy.

3. Rub the warm toasted bread with the whole garlic clove.

4. Beat together the goat cheese and cream cheese until smooth and spreadable.

5. In a bowl, combine diced tomatoes, minced garlic, basil, olive oil, balsamic vinegar, oregano, salt, and pepper. Let marinate for 5 minutes.

6. Spread a generous layer of herbed goat cheese onto each crostini.

7. Spoon the tomato mixture on top.

8. Drizzle with honey and serve immediately.
